Manual method. The harvest takes place around mid-September.
We start with a cold maceration of destemmed grapes while the fermentation occurs using local yeasts. The fermenting wine is bottled with 12 g/l of sugar residual. The wine becomes sparkling trough a natural, ancient and traditional method.
2 months refinement in bottle on yeasts with no further manipulation or disgorgement.
Straw-yellow colour, it looks turbid because of the action of the yeasts in the bottle (which is typical of the traditional method. The aroma is rich and recalls pear, jasmine and hazelnut. The taste is vibrant, pleasantly effervescent and light, fresh and sapid. You can drink this wine during appetizers with seafood dishes
