After a careful selection in the vineyard, the grapes are placed in boxes and left to rest in well-aired, dry rooms (fruttai) in order to favour the concentration of sugars, structure and aromas. In February they are softly pressed in the Marano Valpolicella cellar; this is followed by a long and slow fermentation (about one month) which stops with the cold, leaving a residual sugar of about 100 gr/litre with an alcohol content of 13,5% vol.
In new barriques for 8 months at a low temperature to avoid re-fermentations.

Intense garnet colour with violet reflections. The bouquet has a beautiful intensity of ripe red fruit recalling plum and morello cherry jam. After a short time in the glass, emerges the creamy toasted note of the new barriques used to age the wine. It enters the palate with a great fullness given by both the structure and the acidity concentrated during the drying process of the grapes
A feast par excellence, it is an unmissable presence alongside traditional Veronese desserts.
