Second ten days in August, hand-selected and hand-picked grapes in small 15 kg crates then chilled for 48 hours in cold storage.
Cellar work is totally focused on the utmost respect for the grapes and must in order to make the grape variety and terroir the main players. Only the first-pressing must is retained, so the yield never exceeds 37/38% (to give an idea of the painstaking work, the ratio is 1 plant=1 bottle). The musts deriving from the micro-parcels made in the vineyard are managed separately and best interpreted through maniacal research into the materials to be used in the first fermentation (cement, barrique, tonneaux). The latter is carried out using indigenous yeasts following the preparation of the pied de cuve. Approximately 40% of the vintage wine is kept in the cellar to constitute Vin de Reserve for the cuvees of the coming years. The stabilisation of the wines is carried out by the exclusive use of cold and the re-fermentation in the bottle takes place in a low-temperature environment using a natural cave in the cellar. During the spring period, the Liqueur de Tirage is prepared and added to the base wine. The bottles are sealed with a stainless steel crown cap and are left lying down for at least 24 months to mature with their own fermentation yeasts. The re-fermentation yeasts are expelled from the sparkling wine and the Liqueur d'Expédition is added, which will add between 1 and 12 g/l of sugar depending on the vintage.
The sparkling wine has a delicate pink colour. The mousse is soft and abundant, the perlage fine and persistent. The nose has a lively bouquet characterised by marked notes of morello cherry, pomegranate, pink grapefruit and floral hints of dog rose. On the palate it is fresh and velvety with a perfect harmony between the freshness of the flavour and the elegant creaminess of the mousse
