The grapes, brought into the cellar intact, are pressed at a maximum pressure of 0.60 bar. The must, statically decanted without the use of pectolytic enzymes, ferments with indigenous yeasts at 19/20°C. Fermentation lasts around 40 days. It is drawn off and stays on its lees until the September following the harvest, after which it is filtered and bottled.

Bright straw yellow colour, strikes and fascinates for the rich and delicate floral bouquet given by the time on lees. Strong imprint of spontaneous yeasts in the mouth, which make it a wine that recalls the real and old Garganega of the past. Full and long aftertaste.
A white wine from old vineyards, fermented with indigenous yeasts, it stays four years on its lees before being bottled unfiltered.
