Dourdon Viellard - Brut Tradition
A blend of Pinot Noir (35%), Pinot Meunier (55%) and Chardonnay (10%) grapes grown on the clay-limestone soils typical of the Vallée de la Marne in the Reuil area, the Brut Tradition produced in an artisanal manner by the company led by Fabienne Dourdon-Vieillard (heir to a family of winegrowers since 1812) is a smooth, harmonious and fruity champagne that captivates not only the palate with its roundness but also the nose with aromas of citrus, beeswax, lime blossom and quince. Suitable for any occasion, it pairs well with fish and seafood carpaccio, white meats and cheeses.
Champagne Virginie T. - Brut Trasmission
Transmission is a tribute to blending, in the noble sense of the term: a sparkling wine produced by Maison Virginie T. using only the finest vintages, embodying the most noble qualities of champagne that time, patience and rigour reveal. A cuvée of Pinot Noir (70%), Chardonnay (20%) and Pinot Meunier (10%) grapes from three different vintages (2012, 2013 and 2014), sourced from the best Premier and Grand Cru vineyards in the Montagne de Reims, Côte des Blancs and Marne Valley, aged on the lees for over eight years: a rare, unconventional signature for a wine of great emotion and depth. A sparkling wine that enhances the maturity and elegance of Pinot Meunier: produced by the small maison of Récoltants-Manipulants and Vignerons Indépendants Larnaudie-Hirault in Trois-Puits, a Premier Cru de la Montagne de Reims village, this champagne is fresh and intense, with aromas of exotic fruit and pastries and a dynamic, lively and generous palate. The perfect pairing with oysters, raw fish, savoury vegetarian dishes and slightly spicy cheeses.
Georges Vesselle - Extra Brut Blanc de Noirs
Georges Vesselle's Extra Brut Blanc de Noirs is made from 100% Pinot Noir grapes grown in the Grand Cru vineyards of Bouzy: aged for 36 months on the lees, with a fine and abundant perlage, this champagne offers intense and captivating aromas, with a broad bouquet in which the scents of mirabelle plums, blueberries and plums enhanced by a subtle touch of cumin and nutmeg. On the palate, the soft and creamy attack gives way to a balanced, slightly tannic finish. Champagne Paul Berthelot - Brut Cuvée Blanc de Noirs 1er Cru
Produced in the best vintages exclusively with 100% Meunier grapes from the two Premier Cru terroirs of Dizy and Avenay Val D'Or, this champagne from Maison Paul Berthelot, after a minimum ageing period of 4 years, releases seductive notes of jasmine, frangipani flower and hints of green aniseed, followed by fragrances of passion fruit, mango and candied pineapple, which add complexity and depth. Elegant, dynamic and vibrant, this cuvée is perfect not only as an aperitif but also as an accompaniment to fish and shellfish dishes and white meats.
Champagne Mallol - Extra Brut Grand Cru Les Gouttes D'Or 84 mesi
Grégory Mallol, a passionate and talented winegrower, chose the famous ‘Gouttes d'Or’ plot and its exceptional quality Chardonnay grapes, which fully express the character of the Cramant area, to produce a champagne that offers rare finesse and expressive aromatic elegance, pervaded by the minerality that distinguishes this terroir. After 84 months of ageing in the cellar, the nose opens with an intense and complex bouquet, in which notes of peach and pear blend with the freshness of citrus fruits, lemon and grapefruit above all. This is followed by delicate hints of white flowers and acacia, which gradually give way to more subtle notes of brioche, toasted hazelnut and the elegant minerality of chalk. On the palate, the attack is fresh with a marked acidity that gives the champagne a beautiful dynamism. White fruits, citrus fruits, white flowers, notes of brioche and toast, chalky minerality: every nuance emerges and harmonises in a perfectly balanced taste score. The finish is long and persistent, with mineral notes and an impression of salty freshness. With its moderate body and structure, it pairs perfectly with delicately flavoured dishes such as fish and seafood, poultry and fresh cheeses.
