A unique wine that showcases the beauty of the Alte Madonie and the Italkali rock salt mine.
A Metodo Classico produced from Carricante grapes that ages for at least 36 months in the still-active mine. The environment, saturated with sodium chloride, benefits from constant humidity and a natural temperature of 15 degrees.
“Although still in the experimental phase, a beneficial effect has been observed, where the salt becomes above all a sensory expression: savory notes, mineral tension, and depth,” states Alessio Cicco, who leads the winery.
The project also serves as a tool for tourism promotion, a way to introduce this beautiful site to people outside the region. For many years, in fact, Tenuta San Giaime has been committed to enhancing and promoting the Madonie region through its wines.
